The Rosemary Bees Knees Cocktail by Sapling Gin

Cocktail of the Week: Sapling's new gin is made using grains from an innovative regenerative farming method.

We love a gin cocktail at Elite Traveler, but what we love even more is a gin cocktail that’s good for the planet. And, with the launch of its all-new climate-positive gin, the team at Sapling Spirits have this request covered. To celebrate, we’re sharing the recipe for the Rosemary Bees Knees cocktail, which adds a herby touch to the classic serve.

To create its new gin, Sapling has paired up with Wildfarmed, a regenerative farming company that uses an innovative system to grow and harvest wheat in a non-invasive way that leaves the soil healthy and able to regenerate independently. In doing so, crops can be sustainably grown alongside perennial plants which, in turn, will allow a biodiverse habitat to thrive – something which British farmlands have been desperately starved of.

This approach also serves to literally suck CO2 out of the air – to the extent that by 2030, Wildfarmed estimates that its farming system will be able to rid the atmosphere of the same amount of CO2 as a rainforest the size of Greater London.

Sapling four times distills this organic Wildfarmed wheat in its Cotswolds distillery to create its base spirit, which will eventually become gin or vodka. Sapling Gin is made using the classic London Dry method and boasts the signature flavors of this world-renowned gin with heavy juniper notes leading in zesty citrus. The finish is distinctly herbaceous, with a rosemary kick.

As well as carefully choosing its suppliers to limit its environmental impact, Sapling also goes one step further by committing to planting one tree for every bottle purchased. While some companies have been known to use such off-setting practices as a greenwashing tactic, this is far from the case with Sapling: each bottle has its own unique code inscribed into the cork, which can then be searched on the online ‘Tree Tracker’ to find out exactly where your tree is planted.

The tree planting projects span the breadth of the UK, but one of the most successful is an urban planting scheme in London, which has seen fruit trees flourish across the city’s boroughs. During the UK’s off-season, Sapling invests in planting schemes across the rest of the world, too.

Ingredients:

  • 1¾ oz Sapling Gin
  • ½ oz lime juice
  • ½ oz locally made honey
  • 3 rosemary sprigs
  • a crack of black pepper

Method:

Combine the gin, lime juice and honey in a cocktail shaker and muddle in the rosemary before adding ice and a grind of black pepper. Shake thoroughly and double strain over ice into a rocks glass. Finish with a sprig of rosemary.
