Le Bristol Paris Introduces Dom Pérignon Dining Room

This exclusive experience will see diners sampling some of the finest champagne in the world alongside three-star Michelin dishes.

Iconic stalwart of the Parisian hotel scene, Le Bristol Paris, is to begin offering guests a new experience designed to satisfy the desires of both cuvée and cuisine lovers. The first-ever Dom Pérignon dining room pairs exceptional champagne with food of the highest gastronomic proportions.

This match made in heaven comes thanks to a collaboration between chef Eric Frechon, of Le Bristol’s three-Michelin-star Epicure, and Dom Pérignon’s chef de cave, Vincent Chaperon. Both maestros in their respective fields, it’s set to be an evening that tantalizes the tastebuds, and where better to experience this dinner of delights than the city of lights itself?  

Designed to be enjoyed by two to six guests, this experience will see diners embark on a journey that encapsulates the pinnacle of both French gastronomy and vinification. Exquisite dishes from the mind of a master are set to be paired with expertly selected cuvée, resulting in an experience that is set to be remembered.

For the experience, a bespoke ‘bulle’, or bubble has been conceived. Occupying the center of the hotel’s courtyard garden, these private spaces have been designed to illustrate the contrast between Le Bristol Paris and Dom Pérignon. One-way mirrors have been used to create an interesting effect; the privacy of participants ensured, this is a place to see, without being seen.

The evening begins where all the best ones do: at the bar. At Le Bristol, Le Bar by Dom Pérignon is a particularly impressive one. Here, world-class cuvée, usually only offered by the bottle, is served by the glass, and accompanied by a selection of delectable morsels, crafted by Eric Frechon. It’s a gentle ease into an experience as both maestros’ art forms meet for the first time.

The evening shifts up a gear as guests change scenery and are seated around a dining table. The menu for the evening is entirely exclusive, only for those visiting the Dom Pérignon dining room, and has been specifically constructed to pair with the champagne. Diners are greeted by caviar de Sologne paired with Dom Pérignon Vintage 2013, followed by pan-seared wild turbot with white truffle, accompanied by the impressive Dom Pérignon Vintage 2004 Plénitude 2.

This bottle is a particularly special one. The 2004 vintage saw an ideal climate that provided beautifully ripe fruit at harvest. Diners should expect citrus notes that cede to figs, with a hint of licorice on the finish.

This collaboration between Frechon and Chaperon is set to place each course and glass in absolute harmony, flavor notes pushing and guiding each other through the dish.

The luxurious evening will conclude with black truffle crème glacée served with a hazelnut emulsion and gianduja chocolate, presented alongside a glass of Dom Pérignon Vintage 2002 Plénitude 2 cuvée. This is the pinnacle of champagne, the final crescendo to an evening of excess.

The Le Bristol Paris and Dom Pérignon experience will be offered from November 27, 2023 through February 18, 2024 at $1,282 per person, by reservation only.

 Le Bar by Dom Pérignon will be located in the Palace Garden Tuesday to Saturday, from 6pm with reservation (upon availability).
